Wagon Wheel Pie

Ingredients

CRUST
1 cup flour
½ tsp salt
⅓ cup shortening
3–4 Tbsp cold water

FILLING
½ cup chopped onion
2 Tbsp oil or butter
1 can Spam
1 can mixed vegetables
½ cup shredded cheese
1 cup evaporated milk
2 beaten eggs
2 Tbsp flour
½ tsp salt
¼ tsp paprika

Instructions

1. Preheat the oven to 400°F.
2. Make the crust: combine flour and salt in a bowl. Cut in the shortening. Sprinkle the cold water over the mixture and toss with a fork until the dough holds together. Roll out on a floured surface to a circle 1½ inches larger than the pie plate. Fit into the pie plate and flute the edges. (Marye's note: "this is just a regular piecrust.")
3. Make the filling: sauté the chopped onion in the oil or butter until softened.
4. Cut the Spam lengthwise into ¼-inch slices. Set aside 5 slices for the top; cut the remainder into bite-sized pieces.
5. Combine the bite-sized Spam pieces with the can of mixed vegetables, sautéed onion, shredded cheese, evaporated milk, beaten eggs, flour, salt, and paprika.
6. Pour into the prepared pastry shell.
7. Cut each of the reserved 5 Spam slices in half diagonally and arrange them on top of the filling to resemble a wagon wheel.
8. Bake at 400°F for 35 to 45 minutes.
