Tater Tot Casserole
From a newspaper "Take Five" column kept with Marye's recipe collection. Attributed in the column to Vivian J. Neville of Colorado Springs, who wrote: "I got this from a friend in the extension club. It's an old favorite — I've been making it for over 25 years."
Ingredients
1½ pounds ground beef 1 medium onion, diced 2-3 large carrots, shredded 2 cans cream of chicken soup (undiluted) 1 large bag tater tots
Instructions
1. Preheat the oven to 350°F. 2. In an ungreased 9×13-inch baking dish, crumble the ground beef finely and evenly. 3. Sprinkle with the onion and shredded carrot. 4. Pour the soup over. 5. Arrange the tater tots evenly over the top. 6. Bake 1 hour and 15 minutes.
