Mom's Lasagna

Ingredients

MEAT SAUCE
1 lb Italian sausage, pork sausage, or ground beef
1 clove garlic
1 Tbsp parsley
1 Tbsp basil
1½ tsp salt
1 (1 lb) can tomatoes (about 2 cups)
2 (6 oz) cans tomato paste

CHEESE FILLING
3 cups cream-style cottage cheese OR ricotta cheese
2 beaten eggs
2 tsp salt
½ tsp pepper
2 Tbsp parsley
½ cup Parmesan cheese

ASSEMBLY
10 oz lasagna noodles, cooked
1 lb mozzarella cheese

Instructions

1. Brown the meat with the garlic, parsley, basil, and salt.
2. Add the canned tomatoes and tomato paste. Cook together for 30 minutes.
3. Meanwhile, cook the lasagna noodles per package directions.
4. Mix together the cottage cheese (or ricotta), beaten eggs, salt, pepper, parsley, and Parmesan.
5. Preheat the oven to 375°F.
6. LAYER in a baking dish: ½ noodles, ½ cheese filling, ½ mozzarella, ½ meat sauce. REPEAT.
7. Bake at 375°F for 30 minutes.
8. Let stand 15 minutes before serving.
