Beautiful Salad
From Marye's own personalized 'From the Kitchen of Marye Holley' card (blue-bordered with a baby-chick illustration). No quantities given for the salad components — it's a sketch of the idea, meant to be made by feel.
Ingredients
Watermelon, cubed Tomato, cubed Cucumber, cubed DRESSING ¼ cup vinegar (Marye used white vinegar) 1 Tbsp sugar Salt and pepper, to taste Chopped fresh basil (Marye used dried)
Instructions
1. Cube equal parts watermelon, tomato, and cucumber into a serving bowl. 2. Whisk together the dressing ingredients. 3. Pour the dressing over the salad and toss gently. 4. Serve immediately, while still cold.
Notes
The card doesn't give quantities for the watermelon, tomato, or cucumber. A 1:1:1 ratio by volume works well; for 4 servings, try about 3 cups of each cubed.
