SHERRY'S YAMS

From an email Mom sent me on November 21, 2014 — a Friday before Thanksgiving. Subject line: "Sherry's Yams."

INGREDIENTS

Two 16 oz cans yams, drained and cut to bite size
One 16 oz jar applesauce (Mom buys the six-pack of individual applesauce and saves the extra for another time)
1 tsp cinnamon
5½ Tbsp butter, melted
¾ cup brown sugar
4 Tbsp flour
¾ cup instant rolled oats

INSTRUCTIONS

1. Blend oats, flour, and sugar; cut in butter.
2. In an 8×8 dish, layer half the applesauce and sprinkle with half the cinnamon.
3. Spoon half the topping over that layer.
4. Evenly arrange yams over the topping.
5. Add the rest of the applesauce to cover the yams.
6. Sprinkle the rest of the cinnamon.
7. Add the rest of the topping and spread evenly.
8. Bake at 350°F for approximately 30–40 minutes.
