HOMEMADE NOODLES

INGREDIENTS

NOODLES
2 eggs
1 tsp salt
1 to 1½ cups flour

NOODLES ALFREDO (variation)
4 Tbsp butter
½ cup Parmesan cheese
½ cup cream
½ cup Gruyère cheese

INSTRUCTIONS

1. Beat eggs and salt together; add enough flour to make a very stiff dough.
2. On a floured board, knead the dough for 2 or 3 minutes.
3. Roll into a very thin sheet and let dry for an hour or so.
4. Roll up tightly and cut into strips. Let dry again.
5. Make sure you have plenty of flour below the noodle sheet and on the noodle sheet — it tends to be very sticky.
6. To cook: boil in salted water (or broth) for about 8 minutes. Use plenty of water.
7. Drain and serve with butter, salt + pepper; grated Parmesan; chopped parsley; or for Noodles Alfredo, mix 4 Tbsp butter, ½ cup Parmesan, ½ cup cream, and ½ cup Gruyère cheese.
