SPAGHETTI SAUCE

From a small typewritten label glued onto a worn recipe card in Marye's collection. The original label spells "Parmesan" as "farmesan" — a typewriter quirk; corrected here.

INGREDIENTS

2 Tbsp cooking oil
1 clove garlic, minced
¾ cup chopped onion
½ lb ground beef
1 (6 oz) can tomato paste
3 cups hot water
½ tsp sugar
½ tsp oregano
1 tsp salt
¼ tsp pepper
1 lb spaghetti
Parmesan cheese, to serve

INSTRUCTIONS

1. In a skillet, heat the cooking oil. Cook the chopped onion, minced garlic, and ground beef until soft and crumbly.
2. Mix in the tomato paste, hot water, sugar, oregano, salt, and pepper. Stir into the meat.
3. Cover and simmer for 1 hour.
4. Uncover and continue cooking until the desired consistency.
5. Meanwhile, cook the spaghetti according to package directions.
6. Serve the sauce over the spaghetti, topped with Parmesan cheese.
