GRAPEFRUIT SPINACH SALAD

INGREDIENTS

2 large pink grapefruit (or 1 jar grapefruit segments — reserve 1 Tbsp juice)
4½ cups torn fresh spinach (or mixed greens)
½ cup dried cherries or cranberries

DRESSING
¼ cup olive oil
5 tsp red wine vinegar
½ tsp sugar
⅛ tsp salt
Dash pepper

INSTRUCTIONS

1. In a large bowl, combine the spinach, dried cherries (or cranberries), and grapefruit segments.
2. In a jar with a tight-fitting lid, combine the olive oil, vinegar, sugar, salt, pepper, and reserved grapefruit juice. Shake well.
3. Pour the dressing over the salad and toss to coat.
4. Serve immediately.
